It’s easy to get caught up in the day-to-day hustle and bustle of life. Too often, I’m tempted to just order a pizza or run through the drive-thru window on my way home. However, I’ve found that having a handful of simple, easy recipes on hand makes the idea of making dinner a lot less daunting — and way more full of nutrition! This scrumptious cheeseburger casserole, with its incredibly simple ingredients, definitely fits the bill.

Not only is this casserole a crowd-pleaser, you can also change it up depending on your mood and ingredients on hand. For example, add green chile for an extra kick of spice and flavor, or top your casserole with ketchup and mustard (either yellow mustard or dijon mustard) to really create that classic cheeseburger taste sans bun.

  • olive oil

  • Cheese – We love using sharp cheddar, but you can switch it up by using pepper jack, provolone, mozzarella, or your own favorites.
  • Spices – Try using onion powder or garlic powder.
  • Meat – You can switch out the beef for ground turkey, ground chicken, ground pork, or your favorite plant-based substitute. If you do use beef, we recommend lean ground beef to minimize the amount of fat that might need to be drained from the mixture.
  • Bacon – If you want to take this casserole to the next level, transform it into a bacon cheeseburger casserole with the simple addition of bacon crumbles.
  • Onion – While we typically use a standard yellow onion, you can use your own favorite. Red onion and green onions also work well.
  • Veggies – If you want to keep this a low carb casserole, but still serve it over a side, try spooning it over top of a bed of cauliflower rice or broccoli rice. You can minimize those carbohydrates while adding more healthy fiber to your plate.

Storage

Store this simple casserole in the fridge for up to 3 days. You can transfer it to an airtight container or tightly wrap the original baking dish with plastic wrap after it cools to room temperature.

Ingredients

  • 2 pounds of ground beef
  • 1/2 Tbs olive oil
  • 1 small onion chopped
  • 1 small green bell pepper chopped
  • 1/4 cup ranch dressing
  • 4 oz cream cheese
  • salt and pepper to taste
  • 1 cup cheddar cheese

Instructions

  • In a large pan saute onions in olive oil until translucent. Add green pepper (or any other ingredients) and saute for another 3-5 minutes.
  • Brown ground beef, adding salt and pepper to taste, and drain the fat.
  • Stir in ranch dressing and cream cheese until melted and smooth.
  • Transfer to an 8×8 casserole dish and top with shredded cheese.
  • Bake at 350 degrees for 15 to 20 minutes or until cheese is melted and bubbly.

Notes

(You can also add ANY ingredients you want that you typically put in burgers like tomatoes, mushrooms, etc.)
