This easy recipe calls for items you probably already have in your pantry and fridge. Setting out the eggs and butter the night or morning before you mix up the brownies will add to the deliciousness, but if you haven’t, don’t worry! Butter carefully softened in the microwave and eggs straight from the fridge will still make a delicious dessert! A non-stick pan always helps when making brownies, but is not necessary, just add a little extra non-stick spray.

How to soften butter in the microwave

Confession: I rarely remember to take the butter out of the fridge in time for it to soften! Here’s my answer: place the stick of butter in a microwave-safe dish. Set the power on your microwave to 40% and put the butter in for 30 seconds. Test the softness of the butter by slicing into it with a knife in 2 or 3 places. It will not be the same softness everywhere (at least not in my microwave!). Stir the butter around a bit to relocate the still-hardened parts and put it back in for 10 second intervals on 40% power. If you happen to get a bit of the butter melted, don’t fret. Stir or whisk all the butter to incorporate the melted butter into the softened butter. Let it sit for a minute to cool the melted butter.

Step 1

Preheat your oven to 350 degrees and coat an 8×8-inch pan with non-stick cooking spray.

Cream together the butter and sugar really well. Then add in the vanilla extract and eggs, mixing until smooth and creamy.

Next, add in the dry ingredients: flour, cocoa powder, baking powder and salt. Stir until well combined.

Fold in the chocolate chips or chopped walnuts, if desired.

Pour the batter into your greased 8×8 pan and spread the batter evenly.

Bake for 25 minutes.

Step 7

Check for doneness using a toothpick. Poke the center of the brownies with the toothpick. If the toothpick comes out mostly clean, the brownies are done. If the toothpick is not clean (meaning batter clings to it) put the brownies back in the oven for 3 more minutes and check again. Repeat until the center of the brownies results in a mostly clean toothpick.

Step 8

Unfortunately, the brownies will be WAY too hot to eat right away. 😉 Place the pan of brownies on a cooling rack, giving them at least 10 minutes to cool. If you want to serve them warm, carefully cut them (you may need to clean your knife often) and remove them from the pan directly to individual serving bowls. (This is perfect when you’re serving them with vanilla ice cream!). Waiting until they’re completely cool makes for easier removal and allows for stacking them on a serving plate, and they’ll still be delicious!

Ingredients

  • ½ cup (1 stick) unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs room temperature
  • â…” cup all-purpose flour

  • ½ teaspoon salt
  • ½ cup chocolate chips or walnuts optional

Instructions

  • Preheat oven to 350 degrees F
  • Coat square 8x8 inch pan with non-stick cooking spray
  • In a large bowl, cream together butter and sugar
  • Add vanilla extract and eggs. Stir until smooth and creamy.
  • Stir in flour, cocoa powder, baking powder and salt until well combined
  • Stir in chocolate chips or chopped walnuts, if using
  • Spread evenly into prepared baking pan
  • Bake at 350 degrees F for 25 minutes or until a toothpick inserted comes out clean
  • Cool on wire rack
  • Cut into squares
  • Store in airtight container
