How to Make Strawberry Scones

It couldn’t be easier to make this simple scone recipe.

  1. Pour the flour, baking powder, baking soda, and brown sugar into a large mixing bowl. 
  2. Whisk the ingredients together until they are completely incorporated. 
  3. Add the cubed cold butter pieces to the flour mixture. 
  4. Use a pastry blender to cut the small pieces of butter into the mixture until it reaches a crumb-like consistency.
  5. In a separate small bowl, combine the egg and heavy cream. 
  6. Whisk together the eggs and cream until they are entirely combined.
  7. Add the wet ingredients into the large bowl of dry ingredients.
  8. Stir the mixture together until the dry ingredients are just moistened.
  9. Using a rubber spatula, fold the strawberries into the dough until they are evenly dispersed.
  10. Pour the scone dough into the baking sheet prepared with parchment paper. 
  11. Form a circle with the dough before scoring it into pieces using a sharp knife.
  12. Use a brush to top the scones with heavy cream. Alternatively, you could use an egg wash if you prefer.
  13. Place the cookie sheet in the oven and bake until the tops of the scones are golden brown.

  • Nuts – Crush your favorite nuts and add them to the dough. 
  • Glaze – To add fruity flavor to your glaze you can add a splash of lemon juice to make a lemon glaze — or you can try lime juice or orange juice, too. You can also add flavored extract — add vanilla for a sweet vanilla glaze or choose whichever flavor extract you prefer.
  • Buttermilk – For a slight tang, try substituting buttermilk for some or all of the cream in the dough.

Ingredients

  • Scone Ingredients:
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • â…“ cup brown sugar
  • 8 TBS butter cubed
  • ½ cup heavy cream
  • 1 egg
  • 1 ¼ cup diced strawberries
  • Powdered Sugar:
  • ¾ cup powdered sugar
  • 3 TBS heavy cream

Instructions

  • Directions:
  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl, whisk together flour, baking powder, baking soda, and brown sugar.
  • Cut the cold butter into the flour mixture until well incorporated.
  • In a small mixing bowl whisk together egg and heavy cream.
  • Pour wet ingredients into the dry ingredients and stir until almost incorporated.
  • Fold in strawberries until all ingredients are well incorporated.
  • Transfer mixture onto the prepared baking sheet and press into a circle roughly 1 ½ inch thick.
  • With a sharp knife score the dough into 8 pieces and brush top of scones with heavy cream.
  • Bake for 20 min or until golden brown.
  • When scones come out of the oven separate them on a baking tray to cool
  • For the icing, whisk powdered sugar and heavy cream until well incorporated.
  • Drizzle cooled scones with glaze.
