Corn fritters are a family favorite.  These sweet breakfast treats can be made fried like a donut but are also surprisingly good cooked as a pancake.  Either way, I really think you should try this delicious sweet breakfast.

A first glance at the images below and you might think this is another recipe for buttermilk pancakes. Well, think again. These scrumptious corn fritters pancakes have a different flavor and consistency than pancakes. How’s that for a whole new spin on one of breakfast’s most famous dishes? This corn fritter recipe is both simple and quick to make. All the ingredients you need to have on hand are a can of creamed corn, eggs, butter, sugar, salt, baking powder, and flour. You’ll also want to have a some vegetable oil on hand so you can fry these fritters up to golden perfection. Frying them in a cast iron skillet works really well.

For a more pancake-like texture for your corn fritters, simply add milk to the batter until you reach the right consistency. We recommend starting with 2-4 tbsp and adding more milk if needed. You can always add more milk but it’s pretty hard to take it out once it’s been added. If you choose to go the pancake route, you’ll also want to use a griddle instead of a frying pan.

Fried in true corn fritter fashion or cooked as pancakes, this recipe is a delicious alternative to more traditional breakfast options. We haven’t tried it yet but feel pretty certain these fritters would be good served alongside a savory helping of bacon and eggs. You could even add some salsa and sour cream for added Mexican flair. The possibilities are endless!

Tips

  • Keep a paper towel-lined plate nearby. When you remove the fritters from the heat you can place them on the paper towels to absorb any excess oil.
  • Large eggs are the best size to use for this recipe.
  • Make sure that the oil is hot when you put the fritters into the pan. If you don’t have hot oil, the fritters will be soggy.
  • Ensure that the first side is golden brown before flipping. You’ll want to avoid flipping multiple times.
  • Use a large frying pan to allow plenty of room in between fritters and avoid using too much batter so that they’re not crowded.

What to Serve with these Easy Corn Fritters

These crispy corn fritters are a tasty side dish but they can be served on their own, too.  For a breakfast variation we east them with maple syrup.

Here are some ideas for what to serve (or garnish) them with if you want to go to the savory side:

  • Dollop of sour cream
  • Green onions
  • A drizzle of maple syrup
  • A sprinkle of sharp cheddar cheese (or your favorite cheese)
  • Red onion
  • Eggs
  • Veggies
  • Diced fruit
  • Creme fraiche
  • Diced bell pepper

How to Store

After they have come to room temperature, store leftover corn fritters in an airtight container in the refrigerator for up to one week or in the freezer for up to 3 months. Always store them in a single layer (or separate with parchment paper) so that they do not stick together.

You can reheat the fritters on a sheet pan in the oven or toaster oven, on the stovetop, or in an air fryer.

Ingredients

  • 1 can creamed corn
  • 2 eggs
  • 2 tbsp melted butter
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 1/2 cup flour
  • vegetable oil (for frying)

Instructions

  • Mix all ingredients together in a medium bowl.
  • Heat vegetable oil on the stove in a skillet/pan.
  • Once oil is hot, drop spoonfuls of batter into the pan they will resemble large donut holes.
  • Fry fritters until golden brown, about 1-2 minutes. 
  • Remove finished fritters from the oil with tongs.
  • Serve hot with maple syrup and butter. 

For Pancake Style Fritters

  • Add milk to the batter a little at a time to make a more pourable consistency.
  • Heat a griddle or cast iron pan to medium heat.
  • Coat pan with oil or butter, to help crisp up the pancakes.
  • Cook in the oil or butter til it begins to dry on the edges of the pancake, being careful not to overcook.
  • Lift pancake with a spatula, before flipping spray quickly with cooking spray or add a little more butter to get that crispy edge you want in a fritter. Then flip on to newly sprayed pan and finish cooking.
  • Serve hot with maple syrup and butter. 

Notes

To make pancakes instead of fritters, simply add milk to the batter until you reach the right consistency. Bake on a griddle as you would with typical pancake batter.
