S’more Brownies

These decadent dessert combines the gooey goodness of brownies with the toasted marshmallow and graham cracker flavors of a classic campfire treat.

Ingredients

Ingredients for the crust:

  • 6 graham crackers
  • 3 Tbsp melted butter
  • ¼ tsp salt

Ingredients for the brownies:

  • 8 oz milk or semi-sweet chocolate chocolate chips or bar works
  • 6 Tbsp butter
  • 2 eggs
  • ¼ c sugar
  • ¼ c flour
  • ¼ tsp salt
  • 4 oz mini chocolate chips or bar chopped into small pieces
  • 20-25 large marshmallows
  • 1 oz grated chocolate for garnish–optional

Instructions

Preparing the Graham Cracker Crust:

  • Preheat your oven to 325 degrees.
  • In a food processor, pulse graham crackers and salt until crumbs form.
  • Add melted butter, and pulse until it resembles wet sand.
  • Press the mixture into a well-greased 8” x 8” x 2” baking pan.
  • Bake for 7 minutes, then cool completely before adding the brownie mix.

Preparing the Brownie Batter:

  • Melt butter and chocolate in a saucepan over low heat. Set aside to cool.
  • Whisk sugar and eggs in a bowl. Set them aside.
  • Pour the cooled chocolate mixture into the sugar and egg mixture, whisking until incorporated.
  • Gently fold in flour, salt, and chocolate chips.
  • Pour the batter over the graham cracker crust and bake for 22-25 minutes.

Toasting the Marshmallows:

  • Cut marshmallows in half lengthwise.
  • Once brownies are baked, place marshmallows cut-side down on top.
  • Broil for about 2 minutes until marshmallows turn golden. Watch closely to prevent burning.
  • Cool slightly before serving, garnishing with grated chocolate if desired.

Notes

  • To get a clean cut, use a very hot knife to slice through marshmallows. It may be helpful to have a cup of boiling water at hand to continually dip the knife into after each cut.
