Ingredients for the crust:
6graham crackers
3Tbspmelted butter
¼tspsalt
Ingredients for the brownies:
8ozmilk or semi-sweet chocolatechocolate chips or bar works
6Tbspbutter
2eggs
¼csugar
¼cflour
¼tspsalt
4ozmini chocolate chipsor bar chopped into small pieces
20-25large marshmallows
1ozgrated chocolate for garnish–optional
Instructions
Preparing the Graham Cracker Crust:
Preheat your oven to 325 degrees.
In a food processor, pulse graham crackers and salt until crumbs form.
Add melted butter, and pulse until it resembles wet sand.
Press the mixture into a well-greased 8” x 8” x 2” baking pan.
Bake for 7 minutes, then cool completely before adding the brownie mix.
Preparing the Brownie Batter:
Melt butter and chocolate in a saucepan over low heat. Set aside to cool.
Whisk sugar and eggs in a bowl. Set them aside.
Pour the cooled chocolate mixture into the sugar and egg mixture, whisking until incorporated.
Gently fold in flour, salt, and chocolate chips.
Pour the batter over the graham cracker crust and bake for 22-25 minutes.
Toasting the Marshmallows:
Cut marshmallows in half lengthwise.
Once brownies are baked, place marshmallows cut-side down on top.
Broil for about 2 minutes until marshmallows turn golden. Watch closely to prevent burning.
Cool slightly before serving, garnishing with grated chocolate if desired.
Notes
To get a clean cut, use a very hot knife to slice through marshmallows. It may be helpful to have a cup of boiling water at hand to continually dip the knife into after each cut.
