Minnie Red Velvet Bundt Cake with Red Fondant Bow and Black Ears

Equipment

  • 2 Piping bag medium and large, disposable
  • 1 Silicone Mat Wilton Bow
  • 1 Fondant cutter circle
  • 1 Paintbrush small
  • 1 Cutting board

Ingredients

For the Red Velvet Cake:

  • 1 box red velvet cake mix
  • ¾ cup sour cream room temperature
  • ½ cup canola oil
  • ½ cup water
  • ¼ cup mayonnaise
  • 3 large eggs
  • 2 tsps pure vanilla extract

For the Cream Cheese Frosting:

  • 1 - 8 oz cream cheese or block, at room temperature
  • ¼ cup butter unsalted, softened
  • 2 ½ cups powdered sugar
  • 1 tsps vanilla extract pure
  • 1 cup sprinkles Christmas

For the Decorations:

  • 1 - 4 oz red and black fondant found at Hobby Lobby
  • 1 cup powdered sugar

Instructions

To Make the Red Velvet Cake:

  • Preheat oven to 350°F and spray a mini Bundt pan with cooking spray. Set aside.
  • Using a hand mixer, beat together all cake ingredients until combined.
  • Fill the Bundt cavities ¾ full and bake for 21 minutes or until a toothpick comes out clean.
  • Remove the cake from the oven and place it on the counter to cool for 15 minutes.

To Make the Cream Cheese Frosting:

  • Using a standing mixer, beat all frosting ingredients until combined and smooth. Scoop the frosting into the piping bag.

To Make the Decorations:

  • Lightly dust a cutting board with powdered sugar.
  • Using your hands, knead the red fondant until it's soft and easy to mold.
  • Dip your paint brush in powdered sugar.
  • Place the Wilton silicone mat onto the cutting board and lightly dust the small bow mold with the brush.
  • Pinch off about 1 ½ teaspoons of red fondant and push it into the bow mold. Let it set for 5 minutes before carefully removing it.
  • Place the bow on the cutting board and make 11 more. Allow the bows to sit overnight.
  • Dust the cutting board again with powdered sugar.
  • Knead the black fondant until it's soft and easy to roll out.
  • Roll out the fondant to ¼-inch thickness and use the circle fondant cutter to cut out 24 circles. Set them aside to sit overnight.

Let's Assemble and Enjoy!

  • Place the Bundt cake on a wire rack over a cookie sheet.
  • Cut the tip of the piping bag with the white chocolate and pipe it over the Bundt cakes.
  • Sprinkle Christmas sprinkles over the white chocolate. Let it harden slightly.
  • Pipe a dollop of cream cheese frosting into the center of each Bundt cake.
  • Place two black fondant circles on the sides for the ears and a red bow in the center of the frosting.
