Instructions
Preheat oven to 375°F. Line a baking tray with parchment paper.
In a large mixing bowl, whisk together cake mix, oil, and eggs until well incorporated.
Using a cookie scoop, place rounded cookie scoops on the prepared baking tray.
Using your hand, lightly press down the cookies so they spread out instead of staying rounded.
Bake for 8 minutes, and transfer to a cooling rack to cool completely.
Once cooled completely, in a small bowl microwave white chocolate and coconut oil until melted.
Spoon the white chocolate on the tops of the cookies and smooth it out with the back of the spoon.
Sprinkle the warm chocolate with crushed peppermint candy.
