Ingredients

Cookie Ingredients:

  • 1 box cake mix Devil's Food
  • cup oil or melted coconut
  • 2 large eggs at a room temperature

Topping Ingredients:

  • 1 cup chocolate chips white
  • 1 tsp coconut
  • 15 peppermint candies crushed

Instructions

  • Preheat oven to 375°F. Line a baking tray with parchment paper.
  • In a large mixing bowl, whisk together cake mix, oil, and eggs until well incorporated.
  • Using a cookie scoop, place rounded cookie scoops on the prepared baking tray.
  • Using your hand, lightly press down the cookies so they spread out instead of staying rounded.
  • Bake for 8 minutes, and transfer to a cooling rack to cool completely.
  • Once cooled completely, in a small bowl microwave white chocolate and coconut oil until melted.
  • Spoon the white chocolate on the tops of the cookies and smooth it out with the back of the spoon.
  • Sprinkle the warm chocolate with crushed peppermint candy.
  • Store in an airtight container for 3-5 days.
