Ingredients

  • 2 cups all-purpose flour
  • 1 stick butter
  • 3 large eggs
  • 2 cups caster sugar
  • 1 tbsp baking powder
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp cocoa powder
  • ½ cup coconut desiccated
  • ½ cup chocolate cooking
  • 1/3 cup icing sugar

Instructions

  • Grease a 7-inch bundt pan with butter or margarine. Preheat your oven to 350°F.
  • Mix the sugar with eggs until fluffy and smooth, adding one egg at a time. Beat the mixture for about 5-6 minutes. Melt the butter, wait until cooled, and add slowly, using a hand mixer. Whip for about 5 minutes, then add olive oil and lemon juice.
  • In a separate bowl, combine flour with baking powder, and add dry ingredients to the batter one spoon at a time. Use a hand mixer or a spatula and mix until fully combined. Spoon out one-third of the batter, place in a separate bowl, and add cocoa powder. Use a spoon, and mix until fully smooth. Layer the batter alternatively into the bundt pan. Bake for 40 minutes.
  • Remove the cake from the oven, let it cool in the tin, then turn it out and leave to cool completely. Brake up the chocolate and melt it in a small saucepan on low heat. Stir continuously until fully melted. Let it cool slightly before pouring it onto the bunt cake. Sprinkle with desiccated coconut and icing sugar to imitate the snow effect.
