Strawberry Key Lime No Bake Cheesecake Cups Recipe

A simple no bake recipe for a summer dessert wtih strawberry and key lime flavors.

Ingredients

Crust

  • 1 cup graham cracker crumbs 5 crackers
  • 1/2 cup crushed dried strawberries
  • 2 tbsp unsalted butter melted

Cheesecake

  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 1/2 cup vanilla yogurt
  • 1 tsp vanilla extract
  • zest of 1 key lime

Topping

  • 6 Strawberries halved
  • 2 key limes thinly sliced
  • Whipped cream or Vanilla frosting

Instructions

  • Crush graham crackers and dried strawberries.
  • Add melted butter, mix well and add to the bottom of the shot glasses, set aside.
  • Beat together the cream cheese, sugar, yogurt, lime zest and vanilla.
  • Beat until smooth.
  • Add a piping bag with tip 1M
  • Pipe cheesecake into each shooter.
  • Add additional strawberry - graham crumble
  • Top with whipped cream or frosting.
  • Add half a strawberry
  • Let set in fridge for about an hour, serve cold.

Notes

If making ahead of time, you can brush the strawberries with a little simple syrup to keep them looking fresh.
Vanilla frosting was used in the photos, but whipped cream (cool whip) would have a better balance of sweetness (it just doesn't hold the definition a tip when being piped)
Do not allow these to sit out at room temperature, they are not shelf stable and are meant to be served cold.
This can be made as a 9 inch cheesecake by doubling all of the ingredients and letting set in the fridge for 4-6 hours.
