Halloween Whoopie Pie Monster Cookies

Ingredients

  • 1/2 cup Butter softened
  • 3/4 cup Sugar
  • 1 Egg
  • 1/2 tsp Almond extract
  • 1 1/2 cup Flour
  • 3/4 tsp Baking Soda
  • 1/2 tsp Salt
  • ½ cup Almonds

Filling

  • 3 Tbsp Butter
  • 1/3 cup Cocoa powder
  • 1 cup Powdered sugar
  • 1 tsp milk
  • 1/2 tsp vanilla
  • 1 pinch salt

Decorations

  • Mini Marshmallows

Instructions

  • Prepare all ingredients.
  • Combine the dry ingredients for the dough. Set aside.
  • Cream together the sugar and butter.
  • Add eggs and almond extract, stir to combine.
  • Add dry mixture to wet and combine.
  • Fold in almonds, don't over mix too much.
  • Form round cookies balls and place on a cookie sheet. Bake in the oven at 350 degrees for about 12 minutes. Cool down.
  • Whip together the filling.
  • Put a little stuffing on one top cookie, cover with the second one slightly at an angle. Make teeth and eyes from marshmallows. Decorate as you please.
