Baked Pumpkin Donuts with Streusel

Ingredients

Donut Ingredients:

  • 2 cups all-purpose flour
  • 2 TBS cornstarch
  • 1 TBS baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • 3 TBS butter melted
  • 1 cup pumpkin puree
  • 2 eggs
  • ½ cup brown sugar

Streusel Ingredients:

  • ½ cup flour
  • 2 tsp cinnamon
  • ½ cup brown sugar
  • 2 TBS melted butter

Glaze Ingredients:

  • ½ powdered sugar
  • 1 TBS milk

Instructions

  • Preheat oven to 350 degrees F. Grease a donut mold and set aside.
  • In a medium mixing bowl, whisk together flour, corn starch, baking powder, spices and salt.
  • In a large mixing bowl, combine melted butter, pumpkin puree, eggs, and brown sugar.
  • Add flour mixture to wet ingredients and fold in until well combined. Dough will be thick.
  • Scoop your dough into a piping bag with a large hole.
  • Pipe donut mixture into the donut mold and set aside.
  • In a small mixing bowl, whisk together flour, cinnamon, melted butter, and a brown sugar until a streusel texture is formed.
  • Generously sprinkle your streusel mixture over your donuts, lighting pressing the streusel down so that it adheres to the donut during baking.
  • Bake donuts for 10-12 minutes or until golden brown.
  • While donuts cool mix your powdered sugar and milk to create a glaze
  • Drizzle donuts with glaze once completely cooled.
  • Enjoy!

*You can glaze donuts hot and eat them warm the glaze with just run more from the heat of the donut
