Once oil is hot, drop spoonfuls of batter into the pan they will resemble large donut holes.
Fry fritters until golden brown, about 1-2 minutes.
Remove finished fritters from the oil with tongs.
Serve hot with maple syrup and butter.
For Pancake Style Fritters
Add milk to the batter a little at a time to make a more pourable consistency.
Heat a griddle or cast iron pan to medium heat.
Coat pan with oil or butter, to help crisp up the pancakes.
Cook in the oil or butter til it begins to dry on the edges of the pancake, being careful not to overcook.
Lift pancake with a spatula, before flipping spray quickly with cooking spray or add a little more butter to get that crispy edge you want in a fritter. Then flip on to newly sprayed pan and finish cooking.
Serve hot with maple syrup and butter.
Notes
To make pancakes instead of fritters, simply add milk to the batter until you reach the right consistency. Bake on a griddle as you would with typical pancake batter.
