Corn Fritters

Ingredients

  • 1 can creamed corn
  • 2 eggs
  • 2 tbsp melted butter
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 1/2 cup flour
  • vegetable oil (for frying)

Instructions

  • Mix all ingredients together in a medium bowl.
  • Heat vegetable oil on the stove in a skillet/pan.
  • Once oil is hot, drop spoonfuls of batter into the pan they will resemble large donut holes.
  • Fry fritters until golden brown, about 1-2 minutes. 
  • Remove finished fritters from the oil with tongs.
  • Serve hot with maple syrup and butter. 

For Pancake Style Fritters

  • Add milk to the batter a little at a time to make a more pourable consistency.
  • Heat a griddle or cast iron pan to medium heat.
  • Coat pan with oil or butter, to help crisp up the pancakes.
  • Cook in the oil or butter til it begins to dry on the edges of the pancake, being careful not to overcook.
  • Lift pancake with a spatula, before flipping spray quickly with cooking spray or add a little more butter to get that crispy edge you want in a fritter. Then flip on to newly sprayed pan and finish cooking.
  • Serve hot with maple syrup and butter. 

Notes

To make pancakes instead of fritters, simply add milk to the batter until you reach the right consistency. Bake on a griddle as you would with typical pancake batter.
